Raspberry Linzer Cookies

Delicious and buttery raspberry linzer cookies are perfect for any occasion, combining a sweet jam filling with a crumbly texture.

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the flour and salt, mixing until a dough forms.
  5. Chill the dough for 30 minutes.
  6. Roll out the dough on a floured surface to about 1/4 inch thickness.
  7. Cut into desired shapes using cookie cutters.
  8. Cut out centers in half of the cookies.
  9. Place cookies on a baking sheet and bake for 12-15 minutes until lightly golden.
  10. Once cooled, spread a layer of raspberry jam on the whole cookies and top with the cut-out cookies.
