  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 red bell pepper, chopped
  • 1 zucchini, diced
  • 1 red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse quinoa under cold water and drain.
  3. In a pot, combine quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  4. On a baking sheet, toss vegetables with olive oil, salt, pepper, and garlic powder. Roast for 20-25 minutes until tender.
  5. Once quinoa is cooked, fluff with a fork, then mix in roasted vegetables.
  6. Stir in lemon juice and fresh parsley before serving.
