  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup streusel topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine oats, pumpkin puree, brown sugar, granulated sugar, oil, eggs, and vanilla until well mixed.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in nuts if using. Fill the muffin cups about 2/3 full with batter.
  6. Sprinkle streusel topping on each muffin.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool and enjoy!
