Pumpkin Risotto with Bacon & Parmesan

A warm and comforting dish perfect for autumn, this pumpkin risotto features the savory flavors of turkey bacon and the rich taste of Parmesan cheese.

  • 1 cup Arborio rice
  • 4 cups chicken broth
  • 1 cup pumpkin puree
  • 1/2 cup turkey bacon, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a saucepan, heat the chicken broth and keep it warm over low heat.
  2. In a large skillet, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
  3. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent.
  4. Stir in the Arborio rice and cook for 2 minutes, letting it absorb the flavors.
  5. Gradually add the warm chicken broth, one ladle at a time, stirring often until fully absorbed before adding more.
  6. After 15 minutes, add the pumpkin puree, salt, pepper, and nutmeg, and continue to cook until the rice is al dente.
  7. Remove from heat and stir in the Parmesan cheese and parsley.
  8. Serve hot and enjoy!

Notes

  • For extra creaminess, you can add a splash of heavy cream while mixing in the cheese.
  • Feel free to substitute regular bacon for turkey bacon if desired.
