- 1 cup almond flour
- 1 cup powdered sugar
- 4 egg whites
- 1/4 tsp cream of tartar
- 1/2 cup granulated sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup pumpkin puree
- 1/2 cup butter, softened
- 2 cups powdered sugar (for filling)
- 1/2 tsp vanilla extract
- 2 tbsp milk
- Preheat the oven to 350°F (175°C).
- In a bowl, combine almond flour and powdered sugar.
- In another bowl, whip egg whites with cream of tartar until foamy.
- Gradually add granulated sugar while continuing to beat until stiff peaks form.
- Gently fold the dry ingredients into the egg white mixture.
- Pipe small rounds on a baking sheet and let them sit for 30 minutes.
- Bake for 15-17 minutes.
- Let them cool completely.
- For the filling, mix pumpkin puree, butter, powdered sugar, vanilla, and milk until smooth.
- Sandwich the filling between two macaron shells.
