  • 1 cup powdered sugar
  • 4 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup granulated sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup pumpkin puree
  • 1/2 cup butter, softened
  • 2 cups powdered sugar (for filling)
  • 1/2 tsp vanilla extract
  • 2 tbsp milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour and powdered sugar.
  3. In another bowl, whip egg whites with cream of tartar until foamy.
  4. Gradually add granulated sugar while continuing to beat until stiff peaks form.
  5. Gently fold the dry ingredients into the egg white mixture.
  6. Pipe small rounds on a baking sheet and let them sit for 30 minutes.
  7. Bake for 15-17 minutes.
  8. Let them cool completely.
  9. For the filling, mix pumpkin puree, butter, powdered sugar, vanilla, and milk until smooth.
  10. Sandwich the filling between two macaron shells.

  • Store macarons in an airtight container.
