- 1 cup pumpkin puree
- 1 cup cottage cheese
- 2 eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped nuts or chocolate chips (optional)
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix together pumpkin puree, cottage cheese, eggs, honey, and vanilla extract until smooth.
- In another bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the nuts or chocolate chips if using.
- Divide the batter evenly among the muffin cups and bake for 20–25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely.
