Pumpkin Cottage Cheese Muffins

These Pumpkin Cottage Cheese Muffins are not only easy to make but are also a healthy and delicious treat perfect for any time of the day!

Ingredients

  • 1 cup pumpkin puree
  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix together pumpkin puree, cottage cheese, eggs, honey, and vanilla extract until smooth.
  3. In another bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the nuts or chocolate chips if using.
  5. Divide the batter evenly among the muffin cups and bake for 20–25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For added sweetness, you can increase the amount of honey or maple syrup.
  • These muffins freeze well; just make sure to store them in an airtight container.
  • Experiment by adding spices such as ginger or cloves for a different flavor profile.
