- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
- In a large bowl, mix pumpkin puree, sugars, and vegetable oil until well combined.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in walnuts if using.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
- While the bread is baking, prepare the frosting by beating together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until well combined.
- Once the bread has cooled, spread the cream cheese frosting on top. Serve and enjoy!
