Pumpkin Bread with Cream Cheese Frosting

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups all-purpose flour

  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, mix pumpkin puree, sugars, and vegetable oil until well combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in walnuts if using.
  6. Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
  7. While the bread is baking, prepare the frosting by beating together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until well combined.
  8. Once the bread has cooled, spread the cream cheese frosting on top. Serve and enjoy!
