Ingredients

  • 1 packet active dry yeast
  • 1/4 cup granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup baking soda
  • 1 large egg (beaten for egg wash)
  • coarse salt (for topping)

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let it sit until frothy, about 5 minutes.
  2. Stir in the flour and salt until combined, then knead on a floured surface for about 5 minutes until smooth.
  3. Let the dough rise in a warm place for about 1 hour, or until doubled in size.
  4. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
  5. Dissolve baking soda in 4 cups of water in a large pot and bring to a boil.
  6. Divide the dough into small pieces and roll each piece into a ball. Boil each ball for about 30 seconds and then place on the baking sheet.
  7. Brush each ball with the beaten egg and sprinkle with coarse salt.
  8. Bake for 12-15 minutes or until golden brown.
  9. Remove from the oven and let cool slightly before serving.
