- 6 large egg yolks
- 3/4 cup granulated sugar
- 2 cups mascarpone cheese
- 1 1/2 cups heavy cream
- 1/2 cup coffee, brewed and cooled
- 1/4 cup coffee liqueur
- 1 teaspoon vanilla extract
- 1 package ladyfingers
- 1/4 cup cocoa powder for dusting
- Blend the pistachios into a fine powder.
- In a mixing bowl, whisk together egg yolks and sugar until creamy.
- Add mascarpone cheese to the egg mixture and mix until smooth.
- In another bowl, whip heavy cream until stiff peaks form, then fold it into the mascarpone mixture.
- In a shallow dish, combine brewed coffee and coffee liqueur.
- Dip each ladyfinger briefly in the coffee mixture and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat the layers with the rest of the ladyfingers and mascarpone mixture.
- Refrigerate for at least 4 hours or overnight.
- Before serving, dust with cocoa powder and garnish with crushed pistachios.
