  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs

  • 2 cups diced fresh peaches
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the diced peaches, cinnamon, and lemon juice.
  6. Spoon the mixture into muffin tins, filling them about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Allow to cool slightly before serving.
