  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 2 cups powdered sugar
  • 2 ounces cream cheese, softened
  • 1 tablespoon milk
  • Food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, beat the softened butter and granulated sugar until creamy.
  4. Add the egg, vanilla extract, and almond extract; mix until combined.
  5. Gradually add the dry ingredients to the wet mixture and mix until well incorporated.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets.
  7. Bake in preheated oven for 8-10 minutes or until the edges are just lightly golden.
  8. Let cookies cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
  9. In a mixing bowl, combine powdered sugar, cream cheese, and milk; mix until smooth.
  10. If desired, add food coloring to frosting.
  11. Spread a spoonful of frosting on the flat side of one cookie and sandwich it with another cookie.
