- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 cups powdered sugar
- 2 ounces cream cheese, softened
- 1 tablespoon milk
- Food coloring (optional)
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, beat the softened butter and granulated sugar until creamy.
- Add the egg, vanilla extract, and almond extract; mix until combined.
- Gradually add the dry ingredients to the wet mixture and mix until well incorporated.
- Drop rounded tablespoons of dough onto ungreased baking sheets.
- Bake in preheated oven for 8-10 minutes or until the edges are just lightly golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
- In a mixing bowl, combine powdered sugar, cream cheese, and milk; mix until smooth.
- If desired, add food coloring to frosting.
- Spread a spoonful of frosting on the flat side of one cookie and sandwich it with another cookie.
