A simple yet delicious dish, Pasta aglio e olio is a classic Italian recipe that everyone can prepare easily at home.

Ingredients

  • 400 grams spaghetti
  • 6 cloves garlic, thinly sliced
  • ½ cup extra virgin olive oil
  • 1 teaspoon red pepper flakes
  • 1 cup fresh parsley, chopped
  • Salt to taste
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook according to package instructions until al dente.
  3. While the pasta is cooking, heat the olive oil in a pan over medium heat.
  4. Add the sliced garlic and red pepper flakes to the pan and sauté until the garlic is golden brown.
  5. Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
  6. Add the drained pasta to the pan with the garlic oil and toss to combine.
  7. If needed, add reserved pasta water to achieve desired consistency.
  8. Stir in the chopped parsley and season with salt.
  9. Serve warm with grated Parmesan cheese if desired.

Notes

  • Ensure not to burn the garlic as it will turn bitter.
  • You can adjust the amount of red pepper flakes according to your heat preference.
