Parmesan Tomato Zucchini Bake

A delicious and healthy bake featuring zucchini and tomatoes, topped with Parmesan cheese.

  • 2 medium zucchinis
  • 2 large tomatoes
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis and tomatoes into thin rounds.
  3. In a large bowl, combine the olive oil, garlic, salt, pepper, and basil.
  4. Add the sliced zucchinis and tomatoes to the bowl and toss to coat.
  5. Layer the vegetables in a baking dish and sprinkle the grated Parmesan cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the cheese is golden brown.

Notes

  • For a spicier version, add red pepper flakes.
