Parmesan Brussels Sprouts Salad

A delicious and healthy salad that combines the flavors of roasted Brussels sprouts, crispy turkey bacon, and tangy Parmesan cheese.

  • 1 pound Brussels sprouts
  • 4 slices turkey bacon
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the Brussels sprouts and slice them in half.
  3. Toss the Brussels sprouts with olive oil, garlic powder, salt, and pepper in a bowl.
  4. Spread them out on a baking sheet and roast for 20-25 minutes until golden brown.
  5. While the Brussels sprouts are roasting, cook the turkey bacon in a skillet until crispy, then chop it into pieces.
  6. In a large bowl, combine the roasted Brussels sprouts, turkey bacon, grated Parmesan, and lemon juice. Mix well.
  7. Serve immediately and enjoy!

Notes

  • For extra flavor, add chopped walnuts or cranberries.
  • This salad can be made ahead of time but is best served fresh.
