  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/4 cup sour cream
  • 1/4 cup orange juice
  • 2 teaspoons orange zest
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottoms of mini cheesecake pans.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, orange juice, orange zest, eggs, and vanilla extract. Mix until well combined.
  4. Pour the cheesecake batter over the crusts in the mini pans.
  5. Bake for 18 to 20 minutes, until the centers are set.
  6. Allow to cool, then refrigerate for at least 2 hours before serving.
