One-Pot Healthy Tuscan Minestrone Soup

A delicious and healthy take on classic minestrone soup, featuring turkey bacon and a medley of vegetables.

Ingredients

  • 4 cups low-sodium chicken broth
  • 1 cup chopped turkey bacon
  • 1 cup diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped kale
  • 1 can cannellini beans, rinsed and drained
  • 2 cloves minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the carrots, celery, and garlic; sauté for 5 minutes.
  3. Stir in the diced tomatoes, broth, kale, and Italian seasoning.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add the beans and cook for an additional 5 minutes.
  6. Season with salt and pepper before serving.
