1 pound chicken breasts, diced
1 cup salsa
1 cup long grain rice
2 cups chicken broth
1 cup shredded cheese
1 teaspoon garlic powder
1 teaspoon cumin
Salt and pepper to taste
Instructions
In a large skillet, heat some oil over medium heat and add the diced chicken. Season with salt, pepper, garlic powder, and cumin. Cook until the chicken is browned.
Add the salsa, rice, and chicken broth to the skillet. Stir to combine.
Bring to a boil, then reduce heat to low. Cover and cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
Stir in the shredded cheese until melted. Serve hot.
