One Pot Lasagna Soup

A delicious and easy one pot lasagna soup recipe that brings the comforting flavors of lasagna without the hassle of layering.

  • 1 pound ground beef
  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 6 cups beef broth
  • 12 ounces lasagna noodles, broken into pieces
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, brown the ground beef and Italian sausage over medium heat.
  2. Add the chopped onion and minced garlic; cook until softened.
  3. Stir in the crushed tomatoes, beef broth, broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for about 20 minutes or until noodles are cooked through.
  5. Stir in the ricotta cheese, half of the mozzarella, and Parmesan until melted and combined.
  6. Serve hot, topped with the remaining mozzarella cheese.

Notes

  • This can be made ahead of time and reheated.
