One Pan Balsamic Chicken

A delicious one pan meal featuring balsamic chicken that is easy to prepare and full of flavor.

Ingredients

  • 4 chicken breasts
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon rosemary
  • Salt to taste
  • Black pepper to taste
  • 2 cups cherry tomatoes
  • 1 cup spinach

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix balsamic vinegar, olive oil, minced garlic, rosemary, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the balsamic mixture over them.
  4. Add cherry tomatoes around the chicken.
  5. Bake for 25-30 minutes or until the chicken is cooked through.
  6. In the last 5 minutes, add spinach to the baking dish and bake until wilted.
  7. Serve warm.
