Oatmeal Craisin Cookies

These oatmeal craisin cookies are soft, chewy, and full of flavor, making them the perfect treat for any occasion.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups old-fashioned oats
  • 1 cup dried cranberries (craisins)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs and vanilla extract, mixing well.
  4. In another bowl, combine the flour, baking soda, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the oats and craisins until evenly distributed.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10 to 12 minutes or until golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra flavor, add chopped nuts to the cookie dough.
  • Make sure not to over-bake for the best chewy texture.
