- 9 sheets lasagna noodles
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 10 ounces mushrooms, sliced
- 5 ounces fresh spinach
- 15 ounces ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup grated Parmesan cheese
- 1 jar marinara sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add mushrooms and spinach, cooking until the spinach is wilted and mushrooms are tender.
- In a large bowl, combine ricotta cheese, half of the mozzarella, Parmesan, Italian seasoning, salt, and pepper.
