  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 10 ounces mushrooms, sliced
  • 5 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 1 jar marinara sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  4. Add mushrooms and spinach, cooking until the spinach is wilted and mushrooms are tender.
  5. In a large bowl, combine ricotta cheese, half of the mozzarella, Parmesan, Italian seasoning, salt, and pepper.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer 3 lasagna noodles, half the spinach mixture, half the ricotta mixture, and a layer of marinara. Repeat layers.
  8. Top with remaining noodles, sauce, and mozzarella cheese.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until cheese is bubbly.
  10. Let cool for a few minutes before slicing and serving.
