A delicious and easy-to-make Mushroom and Spinach Lasagna that is perfect for a comforting meal.

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 5 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions; set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until soft.
  4. Add the mushrooms and cook until they release their juices. Then, add the spinach and cook until wilted.
  5. In a bowl, mix ricotta cheese, half of the mozzarella, Italian seasoning, salt, and pepper.
  6. Spread a layer of marinara sauce at the bottom of a baking dish.
  7. Layer 3 lasagna noodles, followed by the ricotta mixture, mushroom-spinach mixture, and marinara sauce. Repeat the layers.
  8. Top with remaining mozzarella and parmesan cheese.
  9. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until cheese is bubbly.
  10. Let it cool for a few minutes before serving.

Notes

  • For a vegetarian option, ensure the marinara sauce is meat-free.
  • You can add additional vegetables like zucchini or bell peppers for more flavor.
