  • 1 cup crushed graham crackers
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the crushed graham crackers, sugar, and melted butter. Press the mixture into the bottom of mini cheesecake pans.
  3. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  4. In another bowl, whip the heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
  5. Fold in the chopped strawberries, then spoon the mixture over the crust.
  6. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For added flavor, consider drizzling melted chocolate on top before serving.
  • Use fresh strawberries for the best flavor.
