  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup cinnamon sugar for swirl

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini loaf pan.
  2. In a large bowl, combine pumpkin, both sugars, and oil until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Pour half of the batter into the prepared pan and sprinkle with cinnamon sugar.
  7. Add the remaining batter on top and sprinkle with more cinnamon sugar.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.
