Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine cream cheese, granulated sugar, vanilla extract, and lemon juice, mixing until smooth.
  3. Mix in the heavy cream until fully incorporated.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Pour the mixture into mini cheesecake molds.
  6. Bake for about 20-25 minutes, or until set.
  7. Allow to cool, then refrigerate for at least 2 hours.
  8. Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize.
