Middle-of-Winter Creamy Tomato Soup

A delicious and comforting creamy tomato soup perfect for the cold winter days, with the added twist of turkey bacon for flavor.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups diced tomatoes, canned or fresh
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, cooking until softened.
  3. Stir in the diced tomatoes and chicken broth. Bring to a simmer and cook for 20 minutes.
  4. Blend the soup until smooth. Return to low heat and stir in the heavy cream and crumbled turkey bacon.
  5. Season with basil, salt, and pepper. Heat through and serve hot.
