Mexican Chicken & Veggie Casserole

A delicious and easy-to-make Mexican chicken casserole filled with fresh veggies, perfect for a comforting meal.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup diced bell peppers
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups shredded cheese
  • 8 tortillas, cut into strips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the chicken, bell peppers, corn, black beans, salsa, cumin, and chili powder.
  3. In a baking dish, layer half of the tortilla strips on the bottom.
  4. Add half of the chicken mixture on top of the tortillas.
  5. Sprinkle half of the cheese over the chicken mixture.
  6. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden.

Notes

  • For a spicier version, add jalapeños or hot sauce.
  • Can substitute ingredients based on personal preference or dietary restrictions.
