  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • ¾ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the grated zucchini, sugars, and oil until combined.
  3. Add in the eggs and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before slicing and serving.

Notes

  • For extra moisture, you can add a tablespoon of sour cream or yogurt.
  • This bread can also be frozen for up to 3 months.
