Mediterranean Tuna Stuffed Peppers

Delicious and healthy Mediterranean Tuna Stuffed Peppers that are easy to prepare and packed with flavor.

Ingredients

  • 4 bell peppers
  • 2 cans tuna, drained
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix tuna, red onion, cherry tomatoes, cucumber, feta cheese, olive oil, lemon juice, oregano, salt, and pepper.
  4. Stuff the mixture into the bell peppers.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 25-30 minutes, or until the peppers are tender.
  7. Remove foil and bake for an additional 5 minutes to brown the tops.

Notes

  • Serve warm or at room temperature.
