Mediterranean Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 bell pepper, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse quinoa under cold water and drain.
  2. In a saucepan, bring water to a boil and add the quinoa.
  3. Reduce heat, cover, and simmer for about 15 minutes, or until water is absorbed.
  4. Remove from heat and let it cool.
  5. In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss gently.
  8. Top with crumbled feta cheese before serving.
