Mediterranean Quinoa Salad

A refreshing Mediterranean quinoa salad that combines nutritious ingredients for a delightful meal.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup chickpeas, drained and rinsed
  • 1/2 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and drain.
  2. In a pot, bring water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes.
  3. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  4. In a large bowl, combine quinoa, cherry tomatoes, cucumber, chickpeas, red onion, feta, and parsley.
  5. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  6. Pour dressing over salad and toss to combine. Serve chilled or at room temperature.

Notes

  • For added flavor, consider adding olives or avocados.
  • This salad can be made a day in advance.
