  • 1 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups miniature marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, combine the cocoa, flour, salt, and baking soda.
  5. Gradually add dry ingredients to the creamed mixture.
  6. Fold in the miniature marshmallows.
  7. Drop by tablespoon onto ungreased cookie sheets.
  8. Bake for 10-12 minutes or until the edges are firm.
  9. Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

  • For extra marshmallow flavor, you can add a few marshmallows on top each cookie before baking.
  • These cookies are best enjoyed warm or on the same day they are baked.
