Low Calorie No Bake Raspberry Cheesecake

This low calorie no bake raspberry cheesecake is a delightful and easy-to-make dessert that satisfies your sweet tooth without derailing your diet.

Ingredients

  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup Greek yogurt
  • 1/2 cup sugar substitute
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1/4 cup raspberry puree

Instructions

  1. In a bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan.
  2. In another bowl, beat the cream cheese until smooth. Add the Greek yogurt, sugar substitute, and vanilla extract. Mix until well combined.
  3. Fold in the fresh raspberries and raspberry puree into the cream cheese mixture.
  4. Pour the filling over the crust and smooth the top. Refrigerate for at least 4 hours or until set.
  5. Once set, slice and serve, garnished with additional raspberries if desired.

Notes

  • For a more intense raspberry flavor, you can add more raspberry puree.
  • This cheesecake can be topped with whipped cream if desired for extra indulgence.
