Lemon Raspberry Cheesecake Bars – A tangy, creamy, and fruity delight!

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter, then press into the bottom of a greased 9×9 inch baking dish.
  3. In another bowl, beat together the cream cheese and sugar until smooth.
  4. Add in the eggs, lemon juice, and lemon zest, mixing well.
  5. Gently fold in the raspberries.
  6. Pour the cheesecake mixture over the crust in the baking dish.
  7. Bake for 25-30 minutes until the edges are set and the center is slightly jiggly.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For best results, use fresh raspberries.
  • You can top with additional raspberries and lemon zest for presentation.
