- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh raspberries
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs and melted butter, then press into the bottom of a greased 9×9 inch baking dish.
- In another bowl, beat together the cream cheese and sugar until smooth.
- Add in the eggs, lemon juice, and lemon zest, mixing well.
- Gently fold in the raspberries.
- Pour the cheesecake mixture over the crust in the baking dish.
- Bake for 25-30 minutes until the edges are set and the center is slightly jiggly.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- For best results, use fresh raspberries.
