  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons poppy seeds
  • ½ cup granulated sugar
  • 1 large egg
  • ½ cup milk
  • ½ cup vegetable oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, and poppy seeds.
  3. In another bowl, combine the sugar, egg, milk, vegetable oil, lemon juice, and lemon zest.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fill the muffin cups about ⅔ full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

  • For a sweeter muffin, you can add more sugar to the mix.
  • These muffins freeze well, just make sure they are completely cooled before freezing.
