Lemon Garlic Orzo with Roasted Vegetables

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1 cup bell peppers, diced
  • 4 slices turkey bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the orzo according to package instructions.
  3. While orzo is cooking, toss the vegetables in olive oil, garlic, salt, and pepper.
  4. Spread the vegetables on a baking sheet and roast for 20-25 minutes.
  5. Once the orzo is cooked, mix in the roasted vegetables, lemon zest, lemon juice, and turkey bacon.
  6. Serve warm.
