Lemon & Poppy Seed Meringue Sandwiches

A delightful dessert combining the refreshing taste of lemon with the unique crunch of poppy seeds, all wrapped in a light meringue.

  • 4 egg whites
  • 1 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 tablespoon poppy seeds
  • 1/2 cup lemon curd
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 225°F (110°C) and line a baking sheet with parchment paper.
  2. In a clean bowl, whisk the egg whites until foamy, then add cream of tartar and continue whisking until soft peaks form.
  3. Gradually add the sugar, one tablespoon at a time, whisking until stiff peaks form and the mixture is glossy.
  4. Gently fold in the vanilla extract and poppy seeds.
  5. Pipe or spoon the meringue mixture onto the prepared baking sheet in the desired shape.
  6. Bake for 1.5 to 2 hours, or until the meringues are dry and can be easily lifted off the parchment.
  7. Once cooled, spread lemon curd on one meringue and top with another, then whip the heavy cream and dollop on top, if desired.

Notes

  • For a tangier flavor, try using a store-bought lemon curd.
  • Ensure that no yolk gets into the egg whites for best results.
