Lasagna Soup

Lasagna Soup combines all the comforting flavors of traditional lasagna in a delightful soup form. It’s easy to make and perfect for a cozy meal.

  • 1 pound ground beef
  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 6 cups chicken or vegetable broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, sauté onion and garlic until softened.
  2. Add ground beef and Italian sausage, cooking until browned.
  3. Stir in crushed tomatoes, broth, and seasonings, and bring to a boil.
  4. Add broken lasagna noodles and simmer until noodles are tender.
  5. Remove from heat and stir in ricotta cheese and half of the mozzarella.
  6. Serve hot, topped with remaining mozzarella and fresh basil.

Notes

  • For a vegetarian version, substitute meat with additional vegetables and use vegetable broth.
  • Try adding spinach for extra flavor and nutrition.
