  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice
  • 1/4 teaspoon lime zest
  • 1 egg yolk
  • 1 cup whipped cream (for topping)
  • 1 tablespoon lime zest (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of mini tart pans to form the crust.
  4. Bake the crusts for about 8 minutes until golden.
  5. In another bowl, whisk together sweetened condensed milk, key lime juice, lime zest, and egg yolk.
  6. Pour the key lime mixture into the baked crusts.
  7. Bake again for 15 minutes until set.
  8. Let cool, then refrigerate for at least 2 hours.
  9. Top with whipped cream and garnish with lime zest before serving.
