Key Lime Cheesecake

A creamy, delicious Key Lime Cheesecake that requires no baking and is perfect for any occasion!

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup key lime juice
  • 16 ounces cream cheese, softened
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream

Instructions

  1. Mix the graham cracker crumbs, sugar, and melted butter in a bowl until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  2. In another bowl, beat the cream cheese until smooth. Gradually mix in the sweetened condensed milk, key lime juice, and vanilla extract until well blended.
  3. Fold in the whipped cream until no streaks remain.
  4. Pour the cheesecake filling into the prepared crust and smooth the top.
  5. Refrigerate for at least 4 hours to set.
  6. Serve chilled, garnished with additional whipped cream or lime slices if desired.

Notes

  • For a stronger lime flavor, add more key lime juice to your taste.
  • Make sure the cream cheese is at room temperature for easier mixing.
