Italian Penicillin Soup

  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried oregano
  • 6 cups vegetable or chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup small pasta, such as orzo or ditalini
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sautéing until the onion is translucent.
  3. Stir in the carrots and celery, cooking for another 5 minutes.
  4. Add the dried oregano and mix well.
  5. Pour in the broth and diced tomatoes, bringing the mixture to a boil.
  6. Add the pasta and cook according to package instructions until al dente.
  7. Stir in the spinach and allow it to wilt before serving.
  8. Season with salt and pepper to taste.

Notes

  • This soup can be enhanced with the addition of cooked chicken for extra protein.
