Ice Cream Cake with Chocolate Cookie Crunch Layer

Indulge in the delightful combination of creamy ice cream and a crunchy chocolate cookie layer with this delicious Ice Cream Cake recipe.

Ingredients

  • 2 cups chocolate sandwich cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 1 quart vanilla ice cream, softened
  • 1 quart chocolate ice cream, softened
  • 1 cup whipped topping
  • 1/4 cup chocolate syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine crushed cookies with melted butter. Press mixture into the bottom of a springform pan to form a crust.
  3. Bake for 10 minutes, then let cool completely.
  4. Spread softened vanilla ice cream over the crust and freeze for 30 minutes.
  5. Spread softened chocolate ice cream over the vanilla layer and freeze for another 30 minutes.
  6. Top with whipped topping and drizzle chocolate syrup over the top.
  7. Freeze until firm, about 4 hours.
  8. When ready to serve, remove the sides of the springform pan and slice.

Notes

  • For a fun twist, add sprinkles or nuts on top before freezing.
  • Let the cake stand at room temperature for a few minutes before slicing for easier serving.
