  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed ripe bananas
  • 1 cup crushed pineapple, drained
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In another bowl, mix the oil and sugar until well combined. Add the eggs and vanilla, and mix until smooth.
  4. Stir in the mashed bananas, crushed pineapple, and chopped pecans.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into a prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  7. Let the cake cool before frosting with cream cheese frosting.
