  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté until the vegetables are tender.
  2. Add minced garlic and cook for an additional minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the chicken breasts, thyme, salt, and pepper. Reduce heat and simmer until chicken is cooked through.
  5. Remove chicken, shred it, and return it to the pot.
  6. Add egg noodles and cook according to package instructions.
