High-Protein Pancake Sausage Mini Muffins

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 2 scoops protein powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/2 cup cooked sausage, crumbled
  • 1 tablespoon maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the flour, oats, protein powder, baking powder, and salt.
  3. In another bowl, whisk together the milk, eggs, and maple syrup.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the crumbled sausage.
  6. Grease a mini muffin tin and fill each cup about 2/3 full with the batter.
  7. Bake for 12-15 minutes or until a toothpick comes out clean.
  8. Allow to cool slightly before serving.
