Healthy Sun Dried Tomato Pasta with Spinach (No Cream!)

A delicious and healthy pasta dish featuring sun dried tomatoes and spinach, perfect for guilt-free indulgence!

  • 8 ounces whole wheat pasta
  • 1 cup sun dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sautéing until fragrant.
  3. Add sun dried tomatoes and spinach to the skillet, cooking until the spinach wilts.
  4. Toss in the cooked pasta, mixing well to combine everything.
  5. Season with salt and black pepper to taste. Serve warm.
