8 ounces whole wheat pasta
1 tablespoon olive oil
2 salmon fillets
2 cloves garlic, minced
1 cup cherry tomatoes, halved
1 cup spinach
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Cook the pasta according to package instructions, then drain.
In a large skillet, heat olive oil over medium heat and add the salmon fillets. Cook for about 4-5 minutes on each side, until cooked through. Remove and set aside.
In the same skillet, add garlic and sauté until fragrant.
Add cherry tomatoes and spinach, cooking until the spinach wilts.
Stir in the heavy cream and Parmesan cheese, mixing well.
Flake the salmon and add it back to the skillet along with the cooked pasta. Toss everything together.
Season with salt and pepper to taste, then serve warm.
Notes
For added flavor, consider including herbs like basil or parsley.
