  • 1 cup bran flakes
  • 1/2 cup honey
  • 1 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, bran flakes, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, combine the honey, applesauce, almond milk, and eggs until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Line a muffin tin with paper liners and fill each cup about 2/3 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.
