  • 1 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened apple sauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add the oats, honey or maple syrup, apple sauce, and vanilla to the bananas and mix well.
  4. In a separate bowl, whisk together the baking powder, baking soda, salt, and cinnamon.
  5. Combine the wet and dry ingredients, mixing until just combined. Fold in walnuts or chocolate chips if using.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
