Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced carrots and celery, sautéing until softened.
  3. Add chicken breast and chicken broth, bring to a boil.
  4. Reduce heat and let it simmer for 20 minutes or until chicken is cooked through.
